Courtney Gibb started his career as an apprentice at Must Winebar under Russell Blaikie, and moved on to working at Star Anise with David Coomer. He met Paul Aaron (co-owner of Tiny’s, Mary Street Bakery, Offshoot and Panama Social) while working at the Greenhouse and joined the Mary Street Bakery team. Over the last five years, he has helped develop the incredible sweet and savoury treat portfolio at Mary Street Bakery, which has developed cult-status. His special donuts and treats are inspired by local, seasonal produce, and the purest of products.
