Nicole Bampton is the head chef at Capriccio Osteria in Leichhardt, Sydney’s little Italy. During her reign of the kitchen and the modern Italian menu, the Osteria has jumped a point up in Gault & Millau’s 2019 Food Guide and was a finalist in the 2018 Local Business Awards.
Nicole’s passion for food and the art of culinary expression began at the tender age of 14 in Perth before moving on to hone her skills and mastery in pastry making under the tutelage of Neal Jackson.
Her vision and ambition led her to Sydney to some of Australia’s most awarded fine dining restaurants including Chef De Partie at Tetsuya and Sepia. Tetsuya himself relied on his young talented protégée for special presentations and training.
At 25, Nicole became head chef at Lucio’s in Paddington and during her tenure it was awarded two Chefs Hats, an outstanding achievement that very few female chefs in Australia had made.
Bampton has been using Manjimup Truffles since 2006 despite never visiting the region.
