APPEARING AT: Chef’s Cabin Must be a Truffle Lover
Russell Blaikie is an acclaimed chef, restaurateur, author, TV presenter, columnist and regular radio contributor. Raised on a dairy and sheep farm in Western Australia’s south west, seasonality was instilled into Russell from an early age.
He won many awards during his apprentice years including State and National Apprentice Cook of the Year and was part of the Australian National Team to compete at the 1984 Culinary Olympics in Frankfurt and in the World Culinary Competition in Osaka 1985. Russell then trained under Anton Mosimann at the Dorchester Hotel in London before moving to the hotel’s two Michelin starred Terrace Restaurant. His passion for food was further developed in his travels through France, Spain, Portugal and Italy.
Russell accepted an opportunity to open 44 King Street as Head Chef, then made the transition from employee to partner. He left the acclaimed brassiere some nine years later and opened Must Winebar (with partners) in 2001 returning to his French Bistro food obsession. Major changes to the Must format and menu in 2018 introduced more plant-based foods, more sharing and less formality. He recently established Catering by Must.
Russell published cookbook Must Eat and has appeared on numerous television programs including MasterChef, Delish, The Garden Gurus, Our State on a Plate.
