APPEARING AT: Chef’s Cabin Brunch in Common
Former Executive Chef at Fremantle’s Bread in Common, Scott Brannigan is opening a new venture at the Coogee Hotel and has partnered with new Bread in Common Executive Chef Chris Eales for a joint Chef’s Cabin session where the duo will demonstrate two dishes each.
Scott is known for his commitment to fresh, seasonal produce, whilst also using techniques at hand from making cheese and charcuterie making to preserving; creating menus that are modern and West Australian at heart. Originally from New Zealand, Scott is known in Perth for his current tenure at Bread in Common, which raised Fremantle's stakes in the growing WA restaurant scene, but also for his years at fine dining stalwart, Balthazar. Scott also spent several years in the UK, working at Babington House, Somerset, then helmed by former River Café Chef, Matt Armistead (latterly of Soho House, West Hollywood) who influenced Scott’s use of fresh seasonal produce, working closely with farmers and reaping the benefits of a year-round walled garden. Scott had the opportunity to work alongside chefs such as Giorgio Locatelli, Tom Aikens and Fergus Henderson.
